Is it Lefsa or Lefse?

Well, whatever it is, I am going to be making it this weekend! If you have never had lefsa (or lefse) you really need to try it. It is the best part of the holidays! I will have to watch my Great-Grandma very carefully as she instructs Mom, Anty Randi and my Grandma how to make it. (And I think my cousin Karlee might be there too!) I am excited not only for the lefsa (or lefse) but for the making of memories this weekend too!

This brings me to my next question... how do you eat your lefsa? (or lefse) We mix whipping cream with brown sugar and make this thick spread and then roll it up. It is so good!

I can't wait to see Grandma and Grandpa today! Mom is picking me up after school and we are heading up north for the long 4 day weekend. Do you have a 4 day weekend? What are your plans?

I call is Lefse.

Years and years ago....I tried to make Lefse a couple times. Grandma ever made me a video! I had so much trouble with it that I threw all of my rolls of potato out the door of my apartment and into the snow!

Now that I am an experienced cook...I think I could do it. Too bad I gave all my Lefse gear to my Mom!

In all the years I have eaten lefse, I never knew or heard of whipped cream and brown sugar! It sounds yummy! We always just have it with butter and sugar.

Sheila - Oh my gosh brown sugar and whipping cream is so good! (You know what I mean? Like the stuff that is thicker than half and half?)

Grammom - I wish you could make lefsa with us too! Maybe when Mom becomes a pro at making it, she can teach you. (Don't hold your breath!) Ha ha!

I spell if Lefsa, but I guess it doesn't really matter though because you eat it you don't spell it! :)

I've been making it with mom the past few years and we have so much fun doing it together. She does the potato part and we both roll it out and take turns on the hot plate.
It's monotonous, but oh so worth it in the end!

Mmmm, I haven't had lefse in years! We'd eat it with butter and brown sugar. Whipped cream sounds yummy.

I like it with butter and sugar. I warm it in the microwave and eat it for breakfast. I haven't made lefse since my friend Ruth died. I have a lefse rolling pin and the big grill.

So are the Olson/Potucek's the only ones that eat Lefse with brown sugar and whipping cream?

I think you need to get to the bottom of this and find out which side of the family started this. Or is it just a Warren thing? I'm very intrigued.

P.S. I think you and I need to make a tutorial for our families about how to leave a comment on a blog.

I think it's the Olson side. Uncle Jerome's side of the family did sugar and butter. His brother in law wrapped it around luteafisk.
